You will need
- 450g pork spare ribs (about 10-12 ribs)
- 2 tablespoons tomato paste
- 2 tablespoons dark brown sugar
- 2 tablespoons light soy sauce
- 1 and a1/2 tablespoons maple syrup or honey
- 1 teaspoon Dijon mustard
- 1 clove of garlic
- Pepper
- Finley chop or crush the garlic. Put it in a bowl with all the other ingredients. Whisk well.
- Lay the ribs in a shallow dish. Pour the sauce over the ribs, then let them marinate for about 30 minutes in the fridge.
- Heat the grill until hot. Grill the ribs for about 15 minutes on each side. Brush them with the extra sauce.
- Any sauce that is left heat and then pour over the ribs when serving.
You will need
- 110g butter
- 170g sugar
- 2 medium eggs
- 200g blueberries
- 275g plain white flour
- 225 ml butter milk
- ½ tsp salt
- ½ tsp bicarbonate soda (bread soda)
- Using a small pan over a low heat melt the butter. This can also be done using a microwave.
- In a large bowl beat the eggs. Add the sugar and beat with a whisk.
- Add in the melted butter and butter milk and mix well.
- Weigh the flour on the scale and add the bread soda to the flour.
- Sieve the flour and bread soda into the wet mixture and fold in the flour.
- Place the blueberries in a sieve and rinse under a tap. Remove any of the stalk that may be left. Fold the blueberries into the muffin mixture.
- Line a muffin tin with cup cake liners. Spoon the mixture into the cup cake liners.
- Get an adult to help and bake them in a moderate -hot oven 190C/375F/gas mark 5 for about 20 minutes until they rise and are firm and brown. Place them on a wire rack to cool.
Muffins are best eaten the day you make them.
A different way to eat your cereal.

- Crunchy Oat Cereal
- Banana
- Strawberries
- Kiwi
- Peach yoghurt
- Strawberry yoghurt.
- Get a special Sundae glass. (ice cream sundae glass)
- Wash and prepare all the fruit. Using a table knife slice the banana into chunks. Scoop out chunks of kiwi using a teaspoon and wash and remove the stem from the strawberries.
- Build your Sundae.
- Put some corn flakes in the bottom, then fruit then yoghurt and do this until you have lots of different layers.
- Sprinkle the top with Granola and top it off with a strawberry.
You can use whatever cereal, fruit and yoghurt you like. This can be made with soya yoghurt.
Makes 3 large of 4 small portions
You will need
- 1 tbsp olive oil
- 1 small garlic clove, crushed
- 25g red pepper, cored, deseeded and cut into strips
- 1 Chicken breast, cut into strips
- ½ red chilli, finely chopped
- ½ tsp balsamic vinegar
- 1 x 200g can chopped tomatoes (Organic)
- 1 tsp dried oregano
- Salt and pepper
- 3-4 flour tortillas
- a little shredded lettuce
- 3 tbsp crème fraîche
- Heat the oil in wok or frying pan, add in garlic, onion, red pepper, then stir fry for 3 minutes.
- Add the chicken and chilli. Stir fry for another 3 minutes.
- Add the balsamic vinegar and cook for a few seconds, then add the chopped tomatoes and oregano.
- Season and cook for about 4 minutes or until the mixture has thickened.
To assemble:
Heat the tortillas according to the packet instructions. Place some of the chicken mixture along the centre of each tortilla, add some shredded lettuce and a little crème fraîche, then roll up.

- Use grated carrot for the hair.
- Use a cookie cutter to cut out round circles for the eyes. Place half and olive in the centre for the eye ball.
- A slice of ham cut into the shape of a mouth and some red pepper cut into triangles for teeth.
- Half a cooked sausage or a cherry tomato for a nose.
Try using different foods and make lots of funny faces. Make animal faces.
- Elephant: ¼ red, green or yellow pepper for the ears. Half of a cooked sausage for a trunk. Bread cut into the shape for a mouth. Make a tree by using one long piece of celery with some cucumber as branches and grated carrot as twigs.
- Shark: Use some cheese triangles as teeth. Slices of cucumber for the eyes. Beet root for the eyes and a large triangle of bread for the fin.
- Fish- Using a table knife cut some pieces of toast into the shape of little fish. Spread with tuna pate and put little pieces of red pepper for the eyes and strips of cucumber for the stripes.

- 1 wholemeal sliced pan
- Soften the butter.
- Using a fork mash the tuna with the butter.
- Grate the lemon rind and ask an adult to ut the parsley with a scissors.
- Add the lemon rind and the parsley to the tuna and butter mixture and mash with a fork.
Makes 10 portions

- 1 mango
- 2 kiwis
- 1 punnet of strawberries
- A handful of fresh mint
- 2 dessertspoons sugar
- Chop up the pineapple on a chopping board into bite-size chunks. Place these into a large mixing bowl.
- The mango has a large seed in the centre.Cut either side of this seed. Place each half flesh side facing up on a chopping board. Cut lengthways first and then widthways making small bite size squares. Turn the each half inside out and the fruit should just pop out.
- Remove the skin from the kiwis and slice into bite-size pieces; add these to the pineapple and mango.
- Wash and halve the strawberries, and add these to the rest of the fruit.
- Mix all the fruit together.
- Cut the fresh mint using safety scissors. Using a pestal and mortor, grind the chopped mint and sugar together.
- Sprinkle the mint sugar on top of the salad and mix well.

- 200ml -300ml orange juice
Blend all the ingredients into a smooth drink.
When making smoothies any type of fruit, yoghurt can be used so do experiment. Try adding in some peanut butter or even museli for a breakfast smoothie.
- 'BREAKFAST SOUP'- Mix some yoghurt with a little orange juice and honey. Add in some fruit chunks, summer fruits work best. Serve cold.
- Cereal Sunday: Using various cereals, yoghurt and fruit make a breakfast sundae in a ice cream sundae glass. Drizzle some blueberry or raspberry coulis on top.
- 'MONKEY SEE MONKEY DOO'- Take some really ripe bananas mash them in a bowl. Add in some chopped nuts, and honey. Put the banana mash into small paper cases, and freeze them.

For about 400g of pasta.
You will need
- 50g butter (unsalted is best to use)
- 250ml of cream
- 1 teaspoon of ground nutmeg
- 200g frozen peas
- 6 dessertspoons of grated parmesan salt and freshly ground black pepper.
- Cook the pasta according to the instructions on the packet.
- Cook the peas according to the instructions on the packet.
- In a large pan heat up the cream and butter stirring constantly over a low heat.
- Add in the nutmeg, peas, salt and pepper and mix.
- Add in the grated Parmesan and stir well.
- Pour the sauce over cooked pasta and mix well.
- Garnish with a little extra nutmeg and serve warm.
Makes 3 large of 4 small portions
You will need
- 1 medium onion
- Small bunch of flat leaf parsley
- 2 cloves garlic
- 800g canned chickpeas
- 1 tablespoon Tahini
- 2 tablespoons of flour
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Chop the onion finely.
- Peel and crush garlic
- Rinse and drain chickpeas.
- Mash the chickpeas with a fork. Mix in the onion, garlic, flour, parsley, coriander, cumin and a teaspoon lemon juice.
- With floured hands, roll the mixture into balls about the size of a golf balls, then flatten them to make small patties.
- Heat the oil and fry the falafel for a few minutes on each side until golden brown. Drain on paper towels.
To serve:
Serve the falafel in warm pita bread with sliced cucumber and tomato.Add chopped mint and a dash of cayenne pepper to plain yoghurt and serve it with the falafel.

You will need
- 175g Plain white flour
- 2 teaspoons baking powder
- 1 dessertspoon white sugar
- A pinch of salt
- 2 eggs
- 250ml milk
- 1 dessert spoon sunflower oil
- Sieve flour, baking powder, and salt into a bowl.
- Add in the sugar.
- Add eggs, one at a time, then milk a little at a time, whisking well after each addition.
- When all the lumps are gone, add the oil and mix well.
- The batter is ready now and doesn't have to be left standing.
- Put one ladle of batter into the hot lightly buttered pan for each pancake.
- Cook over a low to medium heat until the pancake bubbles, then turn over and cook on the other side.
Your first pancake should be cooked on as a trial effort, to make sure the pan is at the right heat and that you haven't put in too much or too little batter.
Fresh Fruit
You will need
- Cup of strawberries
- Cup of blueberries
- Cup of Raspberries
- Juice of half and orange
- Mix all the fruit together in a bowl and add in the juice. Leave the fruit to sit in the fridge for about ½ an hour so all the juices are extracted from the fruit.
Makes 12 mini quiches.
You will need
Pastry
- 180g of plain white flour
- 120g butter
- 1 teaspoon of sugar
- A pinch of salt
- 2 tablespoons of ice cold water
For the filling
- 4 Rashers/streaky bacon
- 2 eggs
- 100ml cream
- 50g chopped cheese
- A pinch of salt and pepper
- Butter for greasing the tin.
To make the pastry
- Heat the tortillas according to the packet instructions. Place some of the chicken mixture along the centre of each tortilla, add some shredded lettuce and a little crème fraîche, then roll up.
- Spoon a few tablespoons of cold water into the crumbed flour and butter and mix until it turns into dough. If you find it too sticky just add a little flour. A secret to good pastry is the less you have to handle it the better it turns out.
- Place the dough in a air tight plastic bag and chill in the fridge for a couple of hours. Divide the pastry into half. You only need half for the amount of egg mixture.
- Flour a large clean work surface area and, using a floured rolling pin, roll out the dough to about the thickness of a wooden spoon. Add some more flour if it becomes too sticky.
- Using the rim of a mug or glass or even a round cookie cutter, cut out circles of dough. You should get about 12 little pies out of this amount of pastry, so keep rolling the excess until it is all used up.
- Grease the baking tray with a little butter. Place the pastry circles individually into each cup cake hole, then chill in the fridge for about 15 minutes.
To make the filling
- Beat the eggs with a fork in a large measuring jug.
- Add in the cream and cheese then season with some salt and pepper.
- Get a grown up to grill the rashers. With your fingers break a little rasher into each pastry case, and then pour in some egg mixture. If you have any spills, just wipe them with a wet cloth before they go into the oven.
- Get a grown up to pre-heat the oven to a moderate temperature 180C/350F/gas mark 4. Bake for about 15-20 minutes. Leave them to cool in the tin before you eat them. They taste better a little cool.
Tip- Don't throw away the leftover pastry, either make another tray or freeze it for another time.

You will need
- Green pepper
- Red pepper
- Yellow pepper
- Garlic
- 12 cherry tomatoes
- Red Onion
- Courgette
- New baby potatoes cut in half
- 2 sprigs fresh Rosemary.
- Chop all the vegetables into bite size chunks.
- Peal the garlic.
- Place all the vegetables in an oven proof dish.
- Drizzle with olive oil and season with salt, pepper and Rosemary.
- Roast in the oven for about 3O minutes. 180C/350F/gas mark 4
Eat hot or cold.
Makes 3 large of 4 small portions
You will need
- 230g plain white flour
- 70g icing sugar
- 170g soft unsalted butter
- 2 egg yolks
- ½ teaspoon of pure vanilla essence
Fresh fruit to decorate, strawberries, raspberries, kiwis, mango and blueberries
Decorate with icing
- Cream together the butter and sugar.
- Add in the egg yolks and the vanilla essence.
- Sieve in the flour and form a dough ball.
- Put some greaseproof paper on a baking tray.
- Roll a small piece of dough into a ball with your hands, then put on the baking trays, setting them well apart ( they will spread in the oven).
- With your fingers, press and pat out the dough to make circles about 7mm think. You should have about 4 circles 11 cm across.
- Pinch the edges with your fingertips to make a pretty shape, then prick the base all over with a fork ( the tiny air holes will stop the base from bubbling up in the oven). Chill in fridge for 10min.
- Meanwhile, ASK AN ADULT TO HELP YOU preheat the oven to 180C (350 F) Gas mark 4.
- ASK AN ADULT TO HELP YOU bake them in the oven for about 15-20 minutes until they are a light golden colour.
- Once cooked leave aside to cool.
- Decorate with some strawberries
Makes 3 large of 4 small portions
You will need
marinade
- Juice of 2 limes
- 3 tsp soy sauce
- 150ml coconut milk ( form the tin is fine)
- 1 clove crushed garlic
- 1 tsp honey
- 1 tsp red curry paste
- 1 small dried chilli ( crumbled)
- handful of fresh coriander
- salt and pepper
- about 1 ½ pounds of chicken or monkfish cut into thick cubes
- Mix all the above ingredients together.
- Marinade chunks of chicken breast or fish for about 2 hours.
For the skewer
- 2 red onion, quartered
- 2 red peppers quartered
- 2 green peppers quartered
- olive oil.
- Take long metal skewers and thread about 6 chunks of chicken or fish on to each one, alternating with pieces of pepper and onion.
- Brush each one with a little olive oil.
- Make sure the BBQ is not too hot and cook them on the grill for about 8-10 minutes, turning and brushing with more oil as you go.
- Season with salt and pepper.
Serve with nice green salad.

- 1 tin tuna
- 100g butter
- 1 teaspoon lemon rind
- 1 teaspoon lemon juice
- 2 dessertspoons of chopped parsley
- salt and pepper
- bread or toast
- Let the butter soften.
- Mix the tuna, butter, lemon rind, lemon juice and parsley together making a type of tuna pate.
- Season with salt and pepper.
- Toast the bread and then using a scissors cut the toast into the shape of a fish.
- Spread the tuna on the toast and use a tiny bit of a red pepper for an eye.
Serve at a party or in lunch box.
Makes 2 glasses
You will need
- 400g watermelon, flesh cut into cubes.
- 150g strawberries
- Juice of 3 oranges
- A little honey to sweeten.
Blend the watermelon flesh, strawberries and orange juice together, and sweeten to taste.
